Honey Strawberry Tea Cooler
YIELD: Makes 4 servings
INGREDIENTS
1 pint – fresh strawberries, stemmed and cleaned
1/4 cup – honey
1 can (6 oz.) – frozen orange juice concentrate
2 cups – brewed green tea, cooled
1/2 cup – water
DIRECTIONS
In a blender or food processor container, combine water, strawberries and honey; process until smooth. Add orange juice concentrate; process until well blended.
Stir into cooled tea.
Serve over ice.
Lemonade Honey Punch
INGREDIENTS
For Ginger Honey Syrup:
1 cup – honey
5 – thin slices of ginger, peeled
1/2 cup – water
For Lemonade:
1 cup – freshly squeezed lemon juice
24 oz. – apple juice
5 cups – water
lemon slices, for serving
DIRECTIONS
Simmer the Ginger Honey Syrup ingredients in a heavy saucepan for about 30 minutes, set aside to cool. Remove the ginger slices and discard.
In a large pitcher combine the lemon juice, apple juice and water. Stir in the cooled Ginger Honey Syrup.
Fill each glass with ice and the lemonade, garnish with a lemon slice.
TIP
You can substitute club soda for the water if you prefer.

Honey Pulled Pork Subs
Ingredients
- 1 small onion, finely chopped
- 1 boneless pork shoulder butt roast (2-1/2 pounds)
- 1 bottle (18 ounces) barbecue sauce
- 1/2 cup water
- 1/4 cup honey
- 6 garlic cloves, minced
- 1 teaspoon seasoned salt
- 1 teaspoon ground ginger
- 8 submarine buns, split
Honey Grilled Peaches
Ingredients
- 3–4 medium peaches uniform in size
- 4 tablespoons honey or maple syrup
- ⅛ teaspoon cinnamon more or less to taste
- ⅛ teaspoon salt more or less to taste
Instructions

Preheat grill on high heat at least 15 minutes or until temperature reaches 450° Fahrenheit. While grill preheats, halve peaches, cutting along natural lines on each peach. Remove peach pits and discard.

In shallow bowl, whisk together honey, cinnamon, and salt, until ingredients are fully incorporated.

One by one, dip each peach half in honey mixture, stopping to whisk mixture again as needed. Repeat process until all peach halves have been coated in honey.

Keep grill heat on high. Place peach halves honey-side down directly on grill grate. Grill peaches 3 to 4 minutes or until grill marks are as dark as desired.

Flip peaches over and grill skin-side down for 1 minute, until rounded side of peaches has softened. Carefully remove peaches from grill and serve immediately over yogurt or ice cream with extra honey, mint, or chopped pistachios as desired.

- 1 cup ketchup
- ½ cup honey
- ¼ cup white vinegar
- ¼ cup molasses
- 1 teaspoon liquid smoke flavoring
- ½ teaspoon salt
- ½ teaspoon ground black peppe
- ¼ teaspoon paprika
- ¼ teaspoon chili powder
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
Directions

Stir ketchup, honey, vinegar, and molasses together in a saucepan over medium heat until smooth; add liquid smoke, salt, black pepper, paprika, chili powder, onion powder, garlic powder, and cayenne pepper. Stir the seasonings into the ketchup mixture, reduce heat to low, and simmer until thickened, about 20 minutes.

Slow Cooker Lamb Shanks with Honey Glaze
YIELD: Makes 2 to 4 servings
INGREDIENTS
2 or 3, about 1 lb. each – lamb shanks
1 tsp. – coarse salt
1/2 tsp. – smoked paprika
1/4 tsp. – freshly ground black pepper
1/2 cup – carrot, chopped
1/2 cup – onion, chopped
1/2 cup – celery, chopped
2 – garlic cloves, bruised
1/2 cup – tomatoes, canned, diced with juice
1/2 cup – white or red wine
1/4 cup – honey, plus 2 T for glaze
3 T – pomegranate molasses

ORANGE LEMON GRAPEFRUIT HONEY PUNCH
Here’s a nice punch that’s not sweetened with additional sugar.
Ingredients
- 3 cups orange juice
- 1 1⁄2cups lemon juice
- 1 1⁄2cups grapefruit juice
- 6 cups water
- 1 -8 tablespoon Pahrump Honey or to taste
- Combine all the ingredients & blend thoroughly.
- Chill & serve.
Honey Watermelon Granita with Honeycomb
INGREDIENTS
1 medium – seedless watermelon
1/2 cup – honey
juice and zest of 4 limes
3″ – square piece of honeycomb, optional
fresh mint and additional lime, to garnish
DIRECTIONS
Cut the melon in half and scoop out the flesh into a blender. Remove any seeds that may be in the watermelon as best you can. Blend the watermelon until pureed, pausing to stir and fully blend as needed.
Add the honey, lime juice and zest and blend until well combined.
Pour the watermelon mixture into a large shallow pan and place in the freezer uncovered.
Wait one hour and with a fork, run the tines through the mixture to break up any ice crystal, return to the freezer and repeat every 30 minutes until fully frozen and icy. This mixture should be icy crystals, not a frozen block and not slushy.
To serve, scoop into shallow glass and garnish with a bit of honeycomb, mint leaves and a lime wedge.
TIP
This recipe can be made into a light watermelon wine granita by adding 12 oz. of moscato or sparkling rose to the mixture before placing in the freezer. This may take additional time in the freezer. You can also add a drizzle of a fruity liqueur such as limoncello or melon liqueur over the granita when serving. This makes a unique and refreshing “after dinner” dessert!
